Distinctive blue green colour that fades to gray as it matures. Wide cap with white gills underneath. Mild savory flavour that is often described as having a licorice nuance. Suitable for a wide range of dishes including soup, stew, pasta and sautéed for a side dish.
Freeze drying helps preserve more of the mushroom’s natural nutrients. However, it does not sterilize the product. Once rehydrated, mushrooms should be thoroughly cooked to ensure they are safe to eat.
Usage instructions: To use, rehydrate by soaking in warm water for 15–20 minutes before cooking.
